Peppermint Mocha Cupcakes
It’s no surprise peppermint mocha is a popular flavour combination.
After all, Starbucks Peppermint Mocha is one of their all-star holiday beverages and is pretty popular!
In fact, if you google “what is peppermint mocha”, the google answers all lead back to Starbucks.
Now is it as popular as pumpkin spice? I don’t know, but it’s a pretty damn good combo, especially during the holidays.

Peppermint Mocha Cupcakes
If you enjoy Starbucks Peppermint Mocha then you must bake these Peppermint Mocha Cupcakes this holiday season.

What You Will Need:
For the cupcakes
- 1 cup granulated sugar
- ½ cup coffee, cooled
- ½ cup canola or vegetable oil
- 2 large eggs
- 1 tbsp apple cider vinegar
- 1 ½ cups all-purpose flour
- 1/3 cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp peppermint extract
To decorate
- ½ cup butter, softened
- 2 cups confectioners’ sugar
- 2 tbsp cocoa powder
- 1 ½ tbsp milk
- 12 peppermint candies
Yields: 12

Line a muffin tin with paper cupcake liners and set aside. Preheat oven to 350 degrees F.
Gather all of the ingredients you will need to make the Peppermint Mocha Cupcakes.

In a large bowl, mix together sugar, coffee, oil, eggs and apple cider vinegar. Mix well.

Next, add flour, cocoa powder, baking soda and salt.

Mix thoroughly until cupcake batter forms.
Add drops of peppermint extract into the batter and mix.

Scoop the batter into the lined muffin tin, about 2/3 full.
Bake for 18 to 20 minutes, or until a toothpick comes out clean when inserted in the centre of a cupcake.
Allow to cool before frosting.

In another large bowl, beat together butter, confectioners’ sugar, cocoa powder and milk with an electric mixer.
These ingredients will make up your chocolate buttercream.

Scoop the buttercream into a piping bag with Wilton #12 tip attached.
Frost each cupcake starting at the edge and going in a circular and upward motion until you get to the middle.
