Easy Gingerbread Man Cake Pops
I’m back with another easy yet adorable Christmas Cake Pop recipe – Gingerbread Man Cake Pops!
When I say easy, I mean easy folks.
All you need is some store-bought mini cupcakes with icing and some chocolate to melt for the outer layer.
Of course, you will also need a silicone mold and cake pop sticks too, but this is a 2-ingredient recipe that comes together so easily.
I purchased my gingerbread man mold at Michael’s in Canada.

What You Will Need:
- 2 Cups of Milk Chocolate Chips
- 12 Mini Cupcakes with Icing (store-bought are perfect for this)
- Silicone Molds
- 4-inch Cake Pop or Lollipop Sticks

How To Make Easy Gingerbread Man Cake Pops

Store-bought mini cupcakes make this recipe extremely easy as you get to skip the step of baking cupcakes and making icing!
I used chocolate for this recipe but didn’t take photos of mixing them up, so I am showing you with vanilla cupcakes from my other cake pop recipes.
Still the same method no matter what flavour of mini cupcakes with icing you use!
So grab everything you will need to make these easy Christmas cake pops and let’s go.
Remove mini cupcakes from their package and place in a bowl.
You could use any flavour that you want.
Combine the cupcakes including the icing.
This will create a thick mixture that will hold together.
Melt the chocolate chips and spoon a small amount into each mold.
Scoop the chocolate up the sides until it coats the interior of the mold.
Make sure that you get chocolate into all the arms.
Place in freezer for 5-10 minutes, at this point the chocolate should be firm.
Remove from freezer and place in the cake pop mixture.
You want to fill it just almost to the top. Do not overfill.
Pour the remainder of the melted chocolate on top and using a spatula even it out.
You can also use an offset spatula to do this.
Place into fridge overnight.
Once your Gingerbread Man Cake Pops have set you can remove them from the mold.
Gently insert a cake pop stick into the cake pop.
You can use a bit of melted chocolate where the stick meets the cake pop to secure it in place.
Now take a bit and enjoy!
Easy Gingerbread Man Cake Pops
Ingredients
- 2 Cups of Milk Chocolate Chips
- 12 Mini Cupcakes with icing (store-bought are perfect for this)
Instructions
- Remove mini cupcakes from their package and place in a bowl. I used chocolate, but you can use any flavour if you want.
- Using your hands or a fork combine the cupcakes into a thick mixture. It should hold well if you were to make a ball. I find that the mini cupcakes have the perfect cake to icing ratio.
- Melt the chocolate chips and spoon a small amount into each mold. Scoop the chocolate up the sides until it coats the interior of the mold. Make sure that you get chocolate into all the arms.
- Place in freezer for 5-10 minutes, at this point the chocolate should be firm.
- Remove from freezer and place in the cake pop mixture. You want to fill it just almost to the top. Do not overfill.
- Pour the remainder of the melted chocolate on top and using a spatula even it out and discard any excess. You can also use an offset spatula to do this.
- Place into fridge overnight.
- Once your Gingerbread Man Cake Pops have set you can remove them from the mold.
- Gently insert a cake pop stick into the cake pop. You can use a bit of melted chocolate where the stick meets the cake pop to secure it in place.
Notes
You will need a gingerbread man silicone mold and 4-inch cake pop sticks. I purchased my gingerbread man mold at Michael’s in Canada and they also sell cake pop/lollipop sticks there too.
