From summer sports to the countless family outings, we are always on-the-go.
While these are a great homemade alternative to prepackaged bars for school lunches and after school snacks, they are really good anytime.
Honey Coconut Oat Bars
Whip up these delicious Honey Coconut Oat Bars in 30 minutes for an on-the-go summer snack.
They are also great for school lunches or a perfect grab and go snack for after school.
What You Will Need:
- 1 cup rolled oats
- 1 cup flour
- 2/3 cup shredded unsweetened coconut
- ½ cup brown sugar
- ½ cup butter
- 3 tablespoons honey
- 1 tablespoon water
- ½ teaspoon baking soda
Yields: 14 Bars
How To Make Honey Coconut Oat Bars

Preheat oven to 325F.
Grease an 11×7 inch pan and set aside.
Gather all of your ingredients.
In a large bowl put your oats, flour, coconut and brown sugar.
Combine and set aside.
In a medium saucepan over medium heat stir together butter, honey and water until the butter is melted.
Remove from heat and stir in the baking soda.
Add butter mixture to the rolled oats mixture.
Mix well until fully combined.
Transfer batter to the prepared pan and press it down firmly.
Bake for 20-25 minutes until golden brown and set.
Remove from the oven and allow to fully cool.
Cut into 14 even bars and enjoy!

Fantastic recipe.. I only had sweetened coconut on hand so only added 1/4 cup of brown sugar and used agave instead of honey. Will definitely make again
