We probably eat pasta more than we should, but I told you before, I love my carbs.
For a girl who isn’t Italian, I sure can whip up some delicious Italian meals.
After all, you know it is good when he goes back for seconds and thirds!
And I know he isn’t just being nice, one time I made him mashed potatoes, he hated them and was sure to let me know it both verbally and visually.
Italian Sausage Capellini With Blistered Tomatoes
You don’t have to be a chef to make this gorgeous Italian Sausage Capellini with Blistered Tomatoes.

You can also add a homemade pasta sauce to this if you are more of the saucy type.
What You Will Need:
- 2 tablespoons olive oil
- 1 lb Italian sausage
- ½ cup of water
- 2 teaspoons dried basil
- ½ teaspoon crushed red pepper flakes
- 2 cups cherry tomatoes
- ½ cup coarsely chopped fresh parsley
- 1 pound capellini pasta
- grated Parmesan cheese for serving

Gather all the ingredients you will need for the Italian Sausage Capellini with Blistered Tomatoes recipe.
First, blister the tomatoes by heating the oil over medium-high heat in a large cast-iron skillet.
Add the tomatoes and give them a quick stir to coat them in oil.
Cook for 3 minutes untouched before stirring and cooking an additional 2 minutes.
Use a slotted spoon to transfer the blistered tomatoes to a bowl or plate and set aside.
Add the sausages to the skillet and cook for 7 minutes, turning often.
Remove sausages from skillet and cut them into ¼ inch thick rounds.
Return the rounds to the skillet and cook an additional 4 minutes.
Add the ½ cup of water, basil and pepper flakes, stirring to scrape up any brown bits from the bottom of the pan.
Add the blistered tomatoes and the parsley.
Stir gently, reduce heat and allow to simmer.
Meanwhile, in a large pot of boiling water cook the capellini until al dente following the directions on the package.
Drain the capellini and arrange in bowls or on a warm serving platter.
Spoon the sausage mixture over the pasta.
