I’m back with another quick weeknight dinner – my Instant Pot Meatball Subs!
As life slowly gets back to normal, kids are back to school, parents are back to work, weeknight dinners can be a stressor for many.
Easy and quick meals that are still delicious and filling are a must. Even though I work from home, I don’t have time to slave over a stove during the week.
I am usually in my office working from 8:15 am until 5:00 pm. Then I take a break to make dinner and spend time with the kids before heading back for a few more hours of work once they are off to bed.
My Instant Pot gets used at least 4-5 times during the week. It not only cooks most meals way faster than their traditional methods, but it also requires no constant supervision and little cleanup.
Of course, you can make this in a slow-cooker as well. If you want to use your slow-cooker just place your sauce in, then your frozen meatballs on top and cook on low for 6 hours.
Instant Pot Meatball Subs
Make these delicious Instant Pot Meatball Subs the whole family will devour with little effort and in 30 minutes or less.
Serve alongside a fresh salad, chips or on its own.
What You Will Need:
- 1 lb frozen meatballs
- 1 jar of your favourite tomato or marinara sauce
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/8 tsp ground black pepper, or to taste
- for spicy kick add some red chili powder or red pepper flakes
- mozzarella or your favourite cheese slices
- sub buns
Note: This recipe works great with any type of frozen meatball; turkey, beef, pork, chicken or even vegetarian meatballs.
When buying pre-made, store-bought frozen meatballs, try to find ones with Italian seasoning in them. If you can’t, regular ones will do just fine.
However, if you want to use homemade meatballs, just make sure to use browned, frozen meatballs.
Homemade Meatball Recipe
If you don’t have your own meatball recipe you can use mine below.
I don’t add in any veggies because my oldest has texture issues, but you can always add in finely chopped onions and/or garlic.
Make a few batches and freeze to have on hand for quick weeknight meals.
Ingredients:
- 500g ground beef, turkey, chicken or pork
- 1 egg
- splash of milk or table cream
- 1 cup of croutons crushed (I use Presidents Choice Zesty Garlic croutons, they add so much flavour and act as a binding agent to keep your meatballs together)
- 1/2 tbsp Italian seasoning
- salt and pepper to taste
- olive oil
Directions:
- Place your ground meat into a bowl.
- Add in your egg, milk, crushed croutons, Italian seasoning, salt and pepper.
- Mix well until fully combined.
- Roll into equal-sized meatballs, usually, 500g will make around 24 meatballs.
- Heat a frying pan with olive oil over medium heat.
- Add in your meatballs and brown each side. You don’t need to fully cook them, just brown them as they will cook in the Instant Pot or slow-cooker.
- Allow them to cool fully before freezing in a freezer-safe container or bag.

Gather all the ingredients you will need to make these delicious Instant Pot Meatball Subs.
In these specific recipe photos, I used store-bought frozen turkey meatballs because I didn’t have any of my homemade beef ones in my freezer.
Frozen store-bought or homemade, both are delicious so use what you’d like!
Pour the tomato or marinara sauce into the inner pot, then mix in the Italian seasoning, salt and ground black pepper.
Stir until well combined then give it a taste, if you’d like you can adjust the seasoning.
Place the meatballs on top of the sauce, no need to push them all the way to the bottom.
Put the lid on the pot, set valve to sealing, press the manual button, ensuring it is on high pressure and set for 8 minutes.
Once cooking time is up allow the pot to naturally release all of the pressure.
Set valve to venting and carefully open the lid but facing away from you.
Slice your rolls, slather some sauce on the bottom then arrange 3 to 4 meatballs on top.
Next, add the cheese slices on top of the meatballs and slather some more sauce over the cheese.
The cheese will melt on its own from the heat of the meatballs and sauce, but if you’d like, you can put the subs under the broiler for a few minutes to melt the cheese more and crisp up the rolls.
