For The Soup:
- 8 cups chicken stock
- 2 (14 oz) cans of diced tomato, drained
- 1 lb chicken breasts
- 1 lb ground beef
- ½ head cabbage
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- salt and pepper to taste
Toppings:
- Avocado
- Lime
- Cilantro
- Dollop of sour cream
- Shredded Mexican cheese
Yields: 6- 8 servings
How To Make Slow Cooker Taco Soup

Gather all of the ingredients you will need to make this delicious soup.
Make the meatballs
Season the ground beef with some salt and pepper.
Next, shape it into meatballs that are approximately 1 tbsp in size.
If you have some extra time, in a skillet, brown your meatballs. This will add extra flavour to the soup.
Cut the cabbage in half and then slice it into small strips.
Place your chicken breasts into the slow cooker.
I prefer to put mine in raw, but if you’d like to brown yours in a skillet beforehand you can.
Add in the meatballs.
Toss in your diced tomatoes.
Next, place the cabbage in the slow cooker.
Add in all of your seasonings.
Pour in the stock.
Set the slow cooker to cook for 7-8 hours on low or 4-5 hours on high.
When it is done cooking, remove and shred the chicken breasts and then put it back into the soup.
Place the soup into bowls and garnish with sliced avocado, lime juice, cilantro, sour cream, and shredded Mexican cheese.

Instructions
- Season the ground beef with salt and pepper. Shape it into meatballs that are approximately 1 tbsp in size (see notes).

- Place the chicken breast, meatballs, diced tomatoes, cabbage, all the seasoning, and the stock into your slow cooker.
- Set it to cook for 4-5 hours on high or 7-8 hours on low.
- When it is done cooking, remove and shred the chicken breasts and then put them back into the soup.
- Place the soup into bowls and garnish with sliced avocado, lime juice, cilantro, sour cream, and shredded Mexican cheese.
