Today on the blog I am sharing this Rainbow Cupcakes recipe and decorating tutorial!
But seriously, how adorable are they?
I know what you are thinking and no, they are not hard to make at all.
If you have ever played with Play-Doh you can make these rainbows out of fondant.
And if you can squeeze a piping bag, you can frost these cupcakes!
Rainbow Cupcakes
Indulge your sweet tooth with these adorable Rainbow Cupcakes.
They are perfect for a birthday party and are very easy to make, even for the novice baker!
What You’ll Need:
Below is what you will need to make the rainbow cupcakes and to decorate them.
Yields: One dozen cupcakes
For the cupcakes:
- 1.5 cups all-purpose flour
- ¾ tsp baking powder
- Pinch of salt
- ¾ cup softened butter
- ¾ cup granulated sugar
- 2 eggs, large
- ½ cup + 2 tbsp milk
- Blue gel food colouring
For the buttercream and decorations:
- 2 sticks butter, softened
- 4 cups confectioners’ sugar
- 2-3 tbsp milk
- Red, orange, yellow, green, blue, purple fondant (about 2-4 oz. of each colour)
Let’s Make Rainbow Cupcakes

Making The Cupcakes:
Gather all your ingredients to make your rainbow cupcakes.
Line a muffin pan with cupcake paper liners. Preheat oven to 350 degrees F.
In a small bowl, sift together dry ingredients: flour, baking powder and salt.
Using an electric mixer, beat together butter, sugar and eggs.
Alternate adding milk and dry ingredients into your wet ingredients. Start and finish with dry ingredients.
Once the batter is formed, add a small drop of blue gel food colouring and beat until completely tinted.
Add batter into each section of your muffin pan, filling it up about 2/3 of the way.
Bake for about 15 minutes or until a toothpick comes out clean when inserted into the middle of a cupcake.
Allow the cupcakes to cool completely on a wire rack.
Decorating The Rainbow Cupcakes:
Next, it is time to create your rainbows out of fondant.
Take a small piece of your red fondant and roll it out so that it’s a strip about 5 inches long and ½ inch thick.
Arch the strip and then do the same with a small piece of orange fondant.
Continue to do this with the rest of the colours, placing one beneath the other: red, orange, yellow, green, blue purple.
In between each fondant strip, you may brush some water so that the fondant strips stick together.
Trim your fondant rainbows where you see fit.
Cut each fondant rainbow in half.
Using an electric mixer, beat together butter, confectioners’ sugar and milk.
Beat on medium and gradually increase to high.
Once the buttercream is formed, scoop into a piping bag with Wilton icing tip #12.
Frost each cupcake by adding small dollops all over the top.
This will make the buttercream look like fluffy clouds.
Insert one fondant half-rainbow into each frosted cupcake and voila, you have yourself some adorable rainbow cupcakes!
