I love baking sweet treats for my family and friends.
We also host and go to many holiday parties, so having some yummy desserts to bring/serve is key!
Mini Gingerbread Cheesecake Bites
These adorable Mini Gingerbread Cheesecake Bites are easy to make and absolutely delicious.
Put these on your baking list for this holiday season and treat your family and friends, or just yourself – I won’t tell!
What You Will Need:
Mini Gingerbread Cheesecake Bites
- 2 (8oz) packages of cream cheese, softened
- ¾ cup of sugar
- 2 eggs
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1 ½ teaspoons ground ginger
- 1 ½ teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 24 ginger snap cookies
Topping:
- ½ cup sour cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla
- mini gingerbread men cookies for decoration
Other:
- Parchment Baking Cups (buy on Amazon.ca or Amazon.com)
How To Make Mini Gingerbread Cheesecake Bites

Preheat oven to 375F and gather all the ingredients you will need.
Line muffin tins with paper baking cups.
Using parchment baking cups works really well for these little cheesecakes. They don’t stick at all.
Place a ginger snap cookie in the bottom of each one and set aside.
Both Walmart’s Great Value ginger snap cookies and President’s Choice ginger snap cookies have fit perfectly in the bottom of a standard size muffin tin.
In a large bowl place your cream cheese, sugar, eggs, lemon juice and vanilla.
Beat together until well blended.
Add in the ginger, cinnamon, nutmeg and cloves.
Beat until mix well.
Fill the muffin tins about 2/3 full with the cream cheese mixture.
Once you have filled them all, bake for 20 minutes.
Remove from oven and cool completely before refrigerating for 2 hours.
In a medium place the sour cream, powdered sugar and vanilla.
Whisk together until combined.
Remove the paper liners from the cheesecakes.
Spread the sour cream mixture over the top of the cheesecakes.
Decorate with the mini gingerbread men.
Serve your Mini Gingerbread Cheesecake Bites chilled and enjoy!
