Mascarpone Cream
- 2/3 cup heavy cream
- 4 oz mascarpone cheese
- 1 tsp vanilla extract
- 1/2 cup canned pumpkin
- 1 tsp pumpkin pie spice
Whipped Cream
- 1 cup heavy cream
- 1/4 cup maple syrup
- 1 tsp pumpkin pie spice
- 2 tbsp brown sugar
Ladyfinger Layer
- 1/2 cup espresso or strong brewed coffee
- 2 tbsp spiced rum
- 8 ladyfingers
To Serve, Optional
- 1/4 cup cocoa powder
- 1/2 tsp pumpkin pie spice

Make the Pumpkin Spice Mascarpone Cream
Gather all of the ingredients you will need to make the pumpkin spice mascarpone cream.
In a large bowl, combine all of the ingredients.
Beat on low speed and gradually work up to medium speed.
Continue to beat on medium speed until the pumpkin and mascarpone are fully combined and the mixture is light and fluffy — about 3 minutes and set aside.
Make the Whipped Cream
Gather all the ingredients you will need to make the whipped cream.
In a large bowl, combine all of the ingredients.
Beat on low speed and gradually work up to medium speed.
Continue to beat on medium speed the whipped cream can hold a stiff peak — about 3 minutes and set aside.

Gather the rest of the ingredients you will need as well as your pumpkin spice mascarpone cream, whipped cream and serving dishes.
In a small bowl, combine the espresso and spiced rum.
Dip a ladyfinger into espresso/rum mixture and then place it into the bottom of your dish.
Repeat with as many ladyfingers as it takes to cover the bottom of the dish completely.
Feel free to break the ladyfingers in half if you need to.
Cover the ladyfingers with 1/3 of the pumpkin spice mascarpone cream.
Smooth the top to ensure an even layer.

Notes
- This tiramisu can be made the night before serving and kept in the refrigerator.
- If you don’t have mascarpone, cream cheese is a great substitute.
- When choosing maple syrup, look for one that says Grade A. Try to avoid anything that says “maple flavoured syrup”.
- If you don’t have spiced rum, you can use amaretto, or leave it out entirely.
- Heavy cream must be used in this recipe. You cannot substitute a lower-fat milk product.
