These light yet delicious Lucky Meringue Cookies are the perfect treat for St. Patrick’s Day!
With only 4 ingredients (5 if you count the gold sprinkles), they are super easy to make.
If you love meringue cookies you can make these any colour, like red for Christmas or purple, orange or black for Halloween!
Lucky St. Patrick’s Day Meringue Cookies
These Lucky St. Patrick’s Day Meringue Cookies are a great treat if you are watching your calories and fat intake.
They are low in fat because they only have egg whites.
While they do have sugar, they are one of the better cookies you can eat and they are also gluten-free!
What You Will Need:
- 4 egg whites, room temperature
- 1 cup granulated sugar
- ¼ tsp lemon juice
- Green gel food colouring
- Golden sprinkles
How To Make:

Gather your ingredients.
Line a baking sheet with parchment paper and preheat the oven to 200 degrees F. Set aside.
Using an electric mixer, beat eggs on medium speed and mix for 2 minutes.
Add lemon juice and gradually increase the speed to high.
As you beat the egg mixture, slowly add your 1 cup of sugar.
NOTE: In order to get the best meringue, ensure all of your tools are completely dry, free of moisture and grease.
Once mixture forms stiff peaks, add one small drop of green gel food colouring.
Using a piping bag, frost a dollop of meringue onto your lined baking sheet, about 1.5 inches in diameter.
Garnish top portion of each “medallion” with green sprinkles.
Bake for two hours.
Once two hours has set turn off heat and let sit in the oven for 35-45 minutes.
Remove from oven and allow to cool.
