Coming up on 15 years in March … who would have thought a last minute decision to go to Wasaga beach Labour Day weekend would be where we met … but it wouldn’t be until months after meeting and exchanging numbers that I sent a random text that would be the beginning of “us”.

Here’s to another year around the sun with you and our little fam 🤍

Braised beef short ribs 🤤 Ingredients 3 table

Braised beef short ribs 🤤

Ingredients

3 tablespoons olive oil
1 sweet onion, quartered
6 carrots, peeled and cut
6-8 beef short ribs
Salt and pepper to taste
1/4 cup all-purpose flour
1 cup dry red wine (Pinot noir)
3-4 cups water
3-4 spoonfuls of better than beef bouillon
2 tablespoons tomato paste
2 sprigs fresh thyme
1 sprig fresh rosemary

Directions:

Preheat your oven to 350 degrees F.

In a large dutch oven with a lid (off), heat one tablespoon of oil over medium high heat. Add in the onion and carrots and cook for a few minutes, stirring constantly. Remove veggies to a plate. 
Season the shortribs with salt and pepper and then coat on all sides with flour. Add 2 more tablespoons of oil to the pot. Add in the ribs and brown on all sides, about 60 seconds per side. Remove to a plate.

Add the wine to deglaze the pan. Scrape the bottom of the pan to release any browned bites - this is flavour city. Bring to a boil and cook for 2 minutes.

Mix together your water and better than beef bouillon. Pour it into your pot.

Add in the tomato paste and stir. 
Place onions and carrots into the pot. Add in the beef short ribs and then the sprigs of thyme and rosemary. 
Cover with the lid and place into the oven.

Cook at 350 degrees for 2 hours, then reduce heat to 325 degrees and cook for an additional 45 minutes. Meat should be very tender, nearly falling off the bone.  
Remove the pot from oven and allow to rest for 20 minutes, with the lid on, before serving.

Skim off any fat that has risen to the top of the liquid, before serving.

Serve over mashed potatoes with the carrots, onions and a spoonful of the au jus from the pot.
