These Christmas Pinwheel Cookies are one of my favourite cookies to bake and they totally remind me of one of my favourite Christmas movies, The Grinch!
The holiday season is fast approaching and while 2020 has been quite the rollercoaster I will be so glad to get off, it really feels like this year has flown by.
I mean, some months felt like they lasted forever, but I am still shocked Christmas is around the corner.
If you participate in any Christmas cookie exchanges, these cookies would really stand out.
They would also be a great cookie to make with the kids and then enjoy while you watch The Grinch.
And if by chance we are allowed to have family gatherings come the holidays, they would be a great dessert to bring to the party!
Grab the kids and head to the kitchen to make these fun (and yummy) Christmas Pinwheel Cookies.
If you are feeling fancy, you can roll the edges in sprinkles or coloured sugar too!
What You Will Need:
- 2 sticks softened unsalted butter (about ½ cup)
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 4 cups all-purpose flour + extra for rolling
- 2 tsp baking powder
- 1 tsp salt
- ½ tsp red gel food colouring
- ¼ tsp green gel food colouring
Yields: 12 cookies
How To Make Christmas Pinwheel Cookies

Gather all of the ingredients you will need to make the Christmas Pinwheel Cookies.
In a large bowl, use an electric mixer to beat together butter and granulated sugar.
Once butter and sugar are well combined, add eggs and vanilla and mix some more.
Next, add flour, baking powder and salt. Mix until cookie dough forms.
Divide the cookie dough into two equal halves.
Place some red gel food colouring on one half.
On the other half place some green gel food colouring.
Knead each dough half until they’re both completely tinted.
Sprinkle a working surface with flour. As well, add flour onto a rolling pin.
Begin by rolling out the green cookie dough into a rectangular shape.
Roll it until it’s slightly larger than 6 in x 9 in and set aside.
Do the same for the red cookie dough and press it on top of the green cookie dough.
With a paring knife, trim the cookie dough so that it’s exactly a rectangular shape.
Rolling lengthwise, roll the layered cookie dough into a log.
Wrap it in plastic and refrigerate for one hour.
Remove the cookie log from the fridge once the time is up.
Preheat oven to 375 degrees F and line a cookie sheet with parchment paper.
Cut out 12 cookie slices from the log, about ½ an inch thick. Line them up on the lined baking sheet.
Bake for 9 to 11 minutes.
Let your Christmas Pinwheel Cookies cool (if you can) and then enjoy!
