The base is a layer of cake that is extremely moist and bursting full of a vibrant lime flavour.
Most of the lime flavour comes from the zest, but that extra lime juice is what makes the bars oh so tender after baking.
Lime Cake Bars Recipe

Cake:
- 2 sticks (1 cup) unsalted butter – softened
- 2 cups granulated sugar
- 4 eggs
- 1 3/4 cup all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- Zest from 1 lime
- 1 tsp lime juice
- (optional) For a stronger lime taste add 1/2-1 tsp lime extract
Frosting:
- 8 oz cream cheese – softened
- 2 tbsp butter – softened
- 2 cups powdered sugar
- 2 tsp lime juice
- Zest from 1 lime
Topping:
- 1 cup sweetened coconut flakes
- Zest from 1 lime
How To Make The Lime Cake Bars Recipe

Gather all of the ingredients you will need for the recipe.
Preheat oven to 350 degrees.
Prepare a 9×13 baking dish with non-stick spray.
Optional: line the pan with parchment paper and spray the paper for easy removal.
Place your butter and sugar in a large bowl.
Beat the butter and sugar until combined and fluffy.
Add in your eggs.
Mix in the eggs.
Next, mix in the lime juice, zest and extract (optional).
Set aside.
In another bowl, mix together the flour, salt and baking soda.
Slowly add the flour mixture into the wet mixture.
Mix until well combined.
Pour into the prepared baking dish.
Bake for 20-25 minutes, until the edges are golden brown and a toothpick comes out clean.
Cool completely before frosting.
Spread the coconut out on a baking sheet and bake at 325 degrees for 5 minutes, spread the coconut around and continue baking for 3-5 minutes at a time, mixing in between each time.
Remove from oven once the coconut is no longer wet and has reached a golden brown colour.
Place your cream cheese and butter in a large bowl.
Beat together the cream cheese and butter until smooth and creamy.
Add in the powdered sugar.
Mix it together.
Add in the lime juice and zest and mix until frosting consistency has formed.
Grab your cooled cake.
Add scoops of the frosting on top of the cake.
Spread the frosting over the cooled cake, top with the last of the lime zest.
Then sprinkle the toasted coconut on top of the Lime Cake Bars.
Slice into 24 equal squares.
