They are easy to make and we never seem to have leftovers, no matter how much I make!
I’ve used red potatoes, but you can use Yukon Gold, blue, purple or fingerling potatoes too, they are all wonderful for roasting.

What You’ll Need:
- 2 cups diced red potatoes
- 1/2 teaspoon parsley flakes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Olive oil cooking spray
How To Make Italian Herb Roasted Potatoes

Preheat oven to 350 degrees.
Dice your potatoes into bite-sized pieces.
Place diced potatoes in a large bowl.
Spray your potatoes with olive oil cooking spray.
Season with Italian seasoning, parsley flakes, salt, garlic powder, and black pepper.
Stir your potatoes to ensure even coated with the herbs.
Place potatoes in a single layer on a greased baking sheet.
Bake for 30 to 40 minutes, stirring halfway through.
Potatoes are done when they are golden brown and crispy on the outside.
Serve alongside your favourite main and enjoy!
