With Thanksgiving creeping up on us quickly, I wan

It’s soup season and today I’m sharing one of

It’s soup season and today I’m sharing one of my fave recipes. Fun fact: I created this soup and then lost my written notes for nearly a year before finding it. It’s packed with flavour and a favourite around here!

Ingredients:

2 tbsp avocado oil
1 onion, diced
4-5 garlic gloves, minced
2 tsp oregano
2 tsp basil
Salt and pepper to taste
4-5 Italian sausage (mild or hot), casing removed
4 cups chicken stock
15 oz tomato sauce
1 can san Marzano tomatoes
4 cups spinach, chopped
3/4 cup cooking cream
1 kg package gnocchi

Directions:

1. Turn on the sauté function on your instant pot and add in your oil

2. Once hot, sauté your onions and garlic until soft

3. Add in your oregano, basil, salt, pepper, and sausage, cook until almost fully browned

4. Pour in your chicken stock

5. Add in your san Marzano tomatoes and the juice, squish each one as you add it in

6. Put on and seal the lid, pressure cook for 10 minutes. Once done quick release the pressure

7. Add in your spinach, cooking cream, and gnocchi, stirring after each addition

8. Allow to rest for 5 minutes so the gnocchi can soften before serving. Top with fresh Parmesan cheese or chilli flakes

I finally got around to putting up my fall decor around the house. The star of the show is always my fireplace … and it makes the living room feel so nice and cozy.

Looks like it’s going to be a wet and damp start to fall this week with the rainy forecast. Definitely giving fall vibes.
